Spinach stew, a traditional easy family meal that kids love can be frozen for up to 3 months if you have leftovers, I always cook a big quantity to freeze for later!
Heat a pot
Add 2 TBS olive oil and some pine nuts, brown a little but not too much
Add 1 onion and sauté for a minute
Add 1 cup chopped coriander and 4-5 minced garlic cloves and sauté for a minute
Add minced beef (I used 400 grams because i was preparing a big batch of stew) some salt and black pepper
Cook meet thoroughly
Add fresh chopped spinach (or frozen ones)- I used 600 grams- in batches and combine
Cover the stew with hot water
When water boils, lower heat, cover pot and cook on low heat for 20-30 minutes
Turn heat off
Add juice of 2 lemons
Serve with vermicelli rice and enjoy
