Spanakopita a favorite recipe from Greece and a crowd pleaser details below!
For the filling:
Sauté 4 minced garlic cloves in 2 TBS olive oil
Add 1/2 cup chopped green onions and sauté for a minute
Add some salt, pepper and nutmeg
Add to them 700-800 grams fresh chopped spinach gradually, sauté for 4-5 mn until the spinach are soft not fully cooked
Strain the mixture and set it aside to cool down a little
Transfer the spinach to a bowl
Add to it half cup of each: chopped dill, mint and parsley
400 grams crumbled feta or belghari cheese
2 whisked eggs and some nutmeg
Combine well
Filling is ready
To prepare Spanakopita
Brush a baking pan with olive oil and line it with 4-5 layers of phyllo pastry
Brush each layer with olive oil before adding the next one
Add the filling and top them with 4-5more phyllo sheets (same way as before)
Bake on a preheated oven at 180 degrees C for 30 minutes then brown the top a little
You can prepare it ahead of time and bake it before serving!
