Mushroom, Spinach and Bacon Risotto Easy Healthy Recipe Ingredients:
1 cup uncooked arborio rice
2 - 4 cups organic chicken broth (low-sodium if possible), heated & kept warm
1/2 cup coconut milk/whole milk
1/3 cup shiitake mushrooms, thinly sliced
1/2 cup baby spinach, finely chopped
1/3 cup bacon slices, chopped
1/2 medium onion, finely chopped
3 garlic cloves, minced
3 tbsp butter
2 tbsp olive oil
seasonings - parsley, ground black pepper & salt (optional)
1 cup grated parmesan cheese (more parmesan cheese for garnish)
How to Prepare Mushroom, Spinach and Bacon Risotto
In a large skillet, sauté mushrooms, bacon and onion in butter until tender.
Add garlic; cook 1 minute longer. In a large pan, sauté rice in oil for 2-3 minutes or until rice is lightly browned.
Stir in 1/2 cup warm broth.
Reduce heat; cook and stir for 20 minutes or until broth is absorbed.
Add in the milk and continue adding more broth, 1/2 cup at a time, and stirring until all the broth has been absorbed and rice is tender but firm.
Add the mushroom mixture from earlier, bacon, baby spinach, seasonings and grated parmesan cheese; cook and stir until heated through.
Sprinkle with parsley and more cheese. Serve warm.
