Qamar Al Din No Bake Cheesecake is a combination of crisp and buttery crust filled with the most velvety cheesecake filling and topped with a luscious apricot pudding. What an impressive and super delicious dessert to be served for your guests during Iftar gatherings.
Qamar Al Din is dried apricot sheets that can be found in most supermarkets during the holy month of Ramadan.
For the base:
200 grams digestive cookies ( 2 cups )
1 Tablespoon brown sugar ( optional)
100 grams butter melted ( 1/2 cup )
For the cheesecake filling
1 cup heavy whipping cream
680 grams cream cheese room temperature
1/2 cup sugar
1/4 cup sour yogurt or greek yogurt
1 Tablespoon lemon juice
A zest of one lemon
1 teaspoon vanilla
To make the base mix the cookies crumbs ( I grind it finely using the food processor) with the brown sugar and the melted butter , mix well and press firmly in the cheesecake mold . Refrigerate the crust meanwhile you are making the filling.
For the filling:
Whip the cream until stiff peaks form and keep in the fridge, now in another bowl beat the soft cream cheese with the sugar until perfectly smooth,add the sour cream,lemon juice and zest and the vanilla extract and continue beating until all well combined. Fold in the whipped cream gently ( using a rubber spatula) .
pour the filling over the cooled crust and cover it with plastic wrap, refrigerate for 6-8 hours at least , preferably 12 hours.
Spread your favorite toppings on top and serve.
For the Apricot layer:
2 cups of ( Qamr Aldeen juice ) or apricot juice .made out of the dried apricot sheets sold during Ramadan .
2 Tablespoons of corn starch
Dissolve the starch in apricot juice then cook on medium heat until thick and creamy.
Pour when it cooled down over the cheesecake then refrigerate fir at least two hours before serving.
