Quinoa blueberry kale salad Ingredients:
1 bunch of kale. Rinse it. Remove the stems. Chop it.
You can soften it by adding a bit of salt & olive oil to kale. Set aside.
1/2 cup quinoa cooked quinoa 3 colors. @benina.for.u @ufoodsal
1 cup cherry tomato
1 pack of blueberry or you can add one pack of strawberry.
Avocado slices is optional.
A sprinkle of pumpkin seeds.
Dressing: either a simple dressing or Balsamic Dressing.
Simple dressing:
1/4 cup Olive oil
1/4 tsp Salt & pepper
2 tbs lemon juice
2 tsp honey.
Balsamic vinegar:
1/4 cup olive oil
1/3 to 1/4 cup balsamic vinegar
1/4 cup honey
1 tbs mustard Dijon
Salt & pepper.
Shake it very well.
