For this recipe, you’ll need plum tomatoes, bell pepper, cucumber, half a red onion, salt and pepper and a tablespoon each of vinegar and olive oil.
Dice the tomatoes, bell pepper, cucumber and onion and put it all in a medium-sized bowl.
Add in the vinegar, olive oil and seasoning, and toss to coat the veggies well.
This salad goes well with dippers like endive and crostini.
