One of the easiest recipes to prepare!
You can use beef instead of chicken, follow the same steps.
You can also do it without any meats and use vegetable broth to cook it!
If you don’t have Moghrabieh spices replace them with a mix of caraway, cinnamon and allspice!
Chicken Moghrabieh Ingredients:
1 kg fresh moghrabieh
2 cups boiled chickpeas
3 TBS moghrabieh spices
1 tsp cumin
2 TBS oil
Salt and black pepper to taste
1 kilogram chicken breasts, boiled, broth reserved
1/2 kilogram small onions, peeled
2 TBS cornstarch
2 TBS water
Chicken Moghrabieh Preparation:
Heat a wide pot
Add 2 TBS oil, moghrabieh, chickpeas, 2 TBS moghrabieh spices, 1 tsp cumin
Combine well and stir a little
Start adding chicken broth gradually (1 cup each time) and cook covered on low heat
Keep repeating until the moghrabieh are soft and well cooked
Aside, heat a pot
Add 1 TBS oil, the onions, 1 TBS moghrabieh spices, 1 tsp cumin and a pinch of black pepper
Brown onions well from all sides
Cover onions with chicken broth and let them cook well
When onions are well cooked, remove from pot
Dissolve the cornstarch in a tiny bit of water
Add the cornstarch mix to the broth and keep whisking until the sauce thickens
Add the onions back, combine well and your sauce is ready!
Serve moghrabieh with chicken and sauce
