A simple and easy chicken vermicelli soup, best served with extra lemon zest.
Ingredients:
2 onions finely chopped
1 big carrot, chopped
1/2 cup vermicelli
1 cup rice
4 cups chicken broth
1 boiled chicken breast
Parsley, lemon juice and lemon zest to serve
Salt and black pepper to taste
Chicken Vermicelli Soup Preparation:
Heat a pot
Cook onions and vermicelli until vermicelli are browned
Add carrots and rice and cook for 3-5 minutes
Add chicken and chicken broth
Bring broth to a boil and simmer on low heat for around 20-30 minutes
Serve with chopped parsley, lemon juice and lemon zest.
