Healthier upside down pineapple cake Ingredients:
Parchment paper to line the baking pan
1 can pineapple slices (1 cup of its juice reserved for cake)
1/4 cup brown sugar **For cake :
2.5 cups flour combined with 1 TBS baking powder
4 whole eggs
3/4 cup sugar
1 tsp vanilla
1/2 cup veg oil
Pineapple Cake Preparation:
Preheat oven to 170 degrees Celsius
Line a pan with parchment paper, grease with some oil , sprinkle evenly the brown sugar and line the pineapple slices
Prepare the cake:
Beat eggs with sugar and vanilla for 2 minutes
Add while beating the oil and pineapple juice until well combined
Gradually add the flour mix to the eggs mix until combined (do not over mix)
Add the cake batter on top of the pineapples
Bake for 30-45 minutes
Allow to cool before turning over and removing the baking paper!
